I wouldn't mind seeing a remake/sequel/port of:

Diddy Kong Racing - Although I'm not sure if Diddy Kong is a Nintendo or Rare owned character, so there might be an issue there....

Perfect Dark - If we can't get Goldeneye this is the second best thing! Shame that Zero was such a letdown, although that's what happens to a game when it switches platform to platform as often as it did.

Conker's Bad Fur Day/Live + Reloaded - I never got a chance to play a Conker game, so I'd definatley give them a try given a second chance.

Jet Force Gemini - I didn't get too far in the N64 original, the first boss for the dog (forgot what his name was). But it was great and there's definatley unexplored potential there.

Main ones I would like to see are Perfecy Dark and Jet Force Gemini.

Being that Conker was already remade... I don't think it would make sense to re-remake a game, although if they maybe wanted to release it a second time like an anniversary thing, they could include the original N64 version, so you could choose between that and the xbox version on the same disc (being that the N64 was un-censored).

I have jet force gemini. i still never beat it. Rare made that donkey 64 game right? i really liked that and i wish another game would be made like it, but that probly wont happen by rare since nintendo obviously wont let them make a dk game on the 360

Golden eye wont be remade unfortunately. There is a video of a finished version of Goldeneye on 360 on the internet. Golden eye is a very odd game to licence a port since nintendo own the rights but ea also do aswell.

I don't generally like straight remakes as I would much rather see an all new game than an old one. I think they're just too cynical. That said, the Goldeneye remake did look fantastic, so I'm not completely averse to the idea if it really adds something.

I'm 100% for XBLA releases however. The one Rare game I think deserves an XBLA release above all else (with all the bells and whistles) is Jet Force Gemini. Underrated and generally ignored on release, but a real gem of a game. With the improved resolution and framerate, and new control system, it would be great.

Aside from JFG, I guess it would have to be Conker's Bad Fur Day - the N64 original, not the over-censored remake. However, I reckon the existence of Live and Reloaded more or less guarantees we won't see BFD on the Arcade, as it is more likely we will get L&R on Xbox Originals.

If Rare ever remade Perfect Dark like they did Goldeneye and put it on the Live Arcade I would love them more than anything.

DO IT RARE :(

It would literally be the best game ever made, as it is one of at the moment and an update would make it top off all the others.
